So, I mentioned my healthy and delicious creamy frozen lemonade on my Facebook Live yesterday, and a few people have contacted me for the recipe. I was just going to link the recipe I used, but then I realized I changed so many things, based on what I had on hand and the health benefits I wanted to add, that it would be much simpler for you if I just give you the recipe the way I made it.
The inspiration for this recipe came from Briana Thomas's Ice Creamed Lemonade. I'm sure it is absolutely wonderful the way she created it, but I didn't have all the ingredients on hand, so started making it my own way. You should check out her recipe, too, and see which one works better for you. I'm certainly not a recipe blogger, so I won't be at all offended if you choose her version! She has lots of other great recipes to offer on her site as well!
So, here is my rendition:
INGREDIENTS:
1/3 cup fat-free, plain Greek yogurt
1/2 cup unsweetened almond milk
2 T heavy cream (this can be left out, and it is still really good!)
3 T lemon juice
Just a a quick splash of vanilla extract (small amount--maybe 1/8-1/4 tsp?)
a pinch of salt
1/2 tsp. xanthan gum
2-3 tsp Pyure (or equivalent of your favorite natural sweetener)
1-2 tsp baobab powder (look up the benefits of this citrus-y tasting superfood!)
1 scoop collagen powder
Ice
INSTRUCTIONS:
Add everything EXCEPT the ice to your blender or blender cup and blend well. Add desired amount of ice and blend again until ice is blended in. If you like yours to be nice and icy, you will probably need to use an actual blender to have room for that much ice--then just pour into desired cup/glass and enjoy!
